Named after Honoré de Balzac, the famous French novelist and playwright, Balzac (bäl-‘zäk) Brasserie serves up a slice of Paris the way its namesake does. Executive Chef Jean-Charles Dubois, previously of The French Kitchen, heads the kitchen at Balzac and brings with him a homely brand of French food inspired by simple recipes from his family’s kitchen. Combined with modern cooking techniques and his love for the freshest and the most distinctive ingredients, Chef Dubois produces rustic French cuisine with the bright, straightforward flavours typical of French classics. Signature dishes include Chef Dubois’s Lobster Bisque served with a side of sautéed mini organic black Qwehli prawns, Beef Cheeks a la Cuillere and Riz Au Lit, a traditional rice pudding based on Chef Jean-Charles’ grandmother’s own recipe. Balzac also offers a series of well-edited French-inspired cocktails and a finely curated wine list. Café chairs that usually line the sidewalks of Paris, cast iron and wooden tables typical of a Parisian establishment and an antique zinc bar sourced from Paris itself dot the venue and transport guests in Singapore to a buzzing brasserie in Paris.
